My newest “toy” is the iPad my honey man, er I mean Santa Claus, gifted me for Christmas. One of my favorite apps is Flipboard which helps satisfy my social media cravings and allows me to stay up to date on topics I’m interested in (design, cooking, fashion and social media).
So last night, my honey was in the mood for dessert and I had just stumbled across a recipe that I wanted to try so we headed up to the kitchen and gave it our best shot. The recipe is from Leites Culinara and I modified it to make it gluten-free (and when I wasn’t looking, honey man modified it to add his own special twist). It was delicious! I’ll definitely be giving more of their recipes a try. Enjoy!
Self-Saucing Chocolate Pudding Recipe
For the pudding
1 cup gluten-free baking flour
A pinch of salt
1/2 cup superfine sugar
3 teaspoons baking powder
4 tablespoons cocoa powder
1 cup milk
6 tablespoons unsalted butter, melted
2 whole eggs, lightly beaten
1 teaspoon vanilla extract
a splash of brandy
For the topping
1 cup brown sugar
2 tablespoons cocoa powder
1 cup boiling water
To make the chocolate pudding: Preheat the oven to 350°F (175°C). Sift the flour, salt, sugar, baking powder, and cocoa powder into a bowl. Add the milk, butter, egg, and vanilla extract and beat until combined. Pour into four 1-cup greased pudding molds. I didn’t have any on hand so I used two large latte mugs. Also, Mr. Accidental Chef poured in a generous splash of brandy when I went to dig out the latte mugs. It’s not in the original recipe but was a tasty addition.
To make the topping: Stir the brown sugar and cocoa powder in a bowl to combine, then sprinkle it over the pudding batter. Pour the boiling water carefully over the puddings, then bake for 20 to 25 minutes.
I served it fresh from the oven with a generous dollop of fresh whipped cream. Enjoy!
