I’m the first to admit I love my gadgets.  I bought a iPod Touch a few months ago and it has quickly become my favorite toy.  So much so that I gave one to my brother for Christmas.  He called me a few weeks ago and told me to download an application that gives you access to hundreds of recipes. 

I was stuck for ideas so I decided to spin me a recipe (there’s a spinner feature which will randomly display a recipe): Blackened Chicken.  Yummy!  In fact, it was so yummy, my honey man didn’t even wait for me to plate it and take a picture before he dug in.  I almost missed getting a shot!

Because it came from my iPod I’ve dubbed my revised version iBlackened Chicken (I doubled the spices!).  My modified recipe follows.

iBlackened Chicken

1 teaspoon paprika
1/8 teaspoon salt
1/2 teaspoon cayenne pepper
1/2 teaspoon ground cumin
1/2 teaspoon dried thyme
1/2 teaspoon ground pepper
1/4 teaspoon garlic powder
2 whole skinless, boneless chicken breasts

Preheat oven to 350F.  Lightly grease a baking sheet or use a tray with a rack.  Heat a cast iron skillet over high heat for five minutes.

Mix together all spices in a shallow bowl or dinner plate.  Lightly oil the chicken breasts by spraying cooking spray on both sides then coat chicken breasts evenly with the spice mixture.

Place chicken in the hot skillet and cook for one minute.  Turn and cook for one minute on the other side.  You can up the cook time if the chicken is not blackened to your liking.  Place on prepared baking sheet.

Bake in preheated oven until no longer pink in the center and juices run clear.

    I was just chatting with my friend about this the other day at Outback steak house. Don’t know how we landed on the topic actually , they brought it up. I do recall having a amazing fruit salad with ranch on it. I digress…
